Vanessa Gianfrancesco has been cooking with her grandparents in Italy since she was two years old. Born and raised in Montreal by her Northern Italian father and Southern Italian mother, Vanessa believes Italian cooking is all about sharing, family, and togetherness.
Her passion for food eventually led her to leave law school and pursue a culinary career. She trained at Montreal’s esteemed culinary institute, ITHQ, where she refined her technique, built discipline in the kitchen, and developed an even deeper respect for food and cooking.
Today, Vanessa is known for breathing new life into classic Italian dishes, infusing them with fresh local produce and a healthy, approachable style. Her philosophy is simple: create dishes that excite the taste buds while giving home cooks the confidence to try them in their own kitchens.
Vanessa also launched her website, Cooking with V, dedicated to her mother and grandmothers, who taught her everything she knows about food. Her Sunday night go-to dinner is pizza, baked in her family’s backyard wood-burning oven. As Vanessa would say at home, Buon Appetito!
