Yield: 8 small mason jars

 

Ingredients:

¾ cup (180 ml) sugar, divided

3 tablespoons (45 ml) cornstarch

¼ cup (60 ml) cocoa powder

¼ teaspoon (1.25 ml) salt

3 cups (710 ml) whole milk

2 egg yolks

½ cup (120 ml) chopped bittersweet chocolate

2 teaspoons (10 ml) vanilla extract

1 tablespoon (15 ml) butter

2 cups (470 ml) chocolate cookie crumbs

Green sprinkles, to decorate

12-16 gummy bugs and worms, to decorate

8 x 4-ounce (120 ml) mason jars

 

Method:

Add ½ cup (120 ml) sugar, cornstarch, cocoa powder, and salt to a pot, and whisk to combine. Slowly add milk, whisking to ensure there are no lumps. Heat the mixture on medium until it starts to thicken, stirring occasionally. Remove from heat.

In a bowl, whisk together the egg yolks and the remaining sugar. Slowly pour half the milk mixture into the eggs, stirring constantly. Pour the egg mixture into the remaining milk mixture and stir until well combined. Put the pot back on the heat and whisk until boiling. Remove from heat, and gradually add chocolate, stirring until melted. Add vanilla and stir in. Add butter and stir in. Let cool slightly until warm.

To assemble, put alternate layers of chocolate cookie crumbs and chocolate pudding in each mason jar, starting and ending with chocolate cookie crumbs. Shake green sprinkles on top. Top with colourful gummy bugs and worms.
