Goat Cheese and Sundried Tomato Crustless Mini Quiches

These gluten free mini quiches are the perfect savoury bite to add to your Afternoon Tea tower or healthy breakfast.

Ingredients:

  • ½ medium sweet onion, diced
  • 5-6 sundried tomatoes, diced
  • 6 ounces (170 g) goat cheese
  • 6 whole eggs
  • 3 tablespoons (45 ml) milk
  • Salt and pepper

Method:

Preheat the oven to 350 F (175 C).

Spray a muffin tin with cooking spray.

In a medium bowl, combine the onion, sundried tomatoes, goat cheese, eggs, and milk and season with salt and pepper.

Fill each well of the muffin tin ¾ of the way with the egg mixture and bake until they spring back to the touch, roughly 15-18 minutes.

Allow quiches to cool slightly before removing and serving.
