The Inspiration
Nate Lippy, alongside CJ Fraizer, brings a viral cooking trend to life with this butter bath technique—an approach that has gained popularity for its ability to infuse proteins with incredible richness and flavor. Inspired by high-end steakhouse methods and social media cooking experiments, Nate adapts the concept for the griddle, making it accessible without sacrificing quality.
On Griddle Nation, the goal is always to push boundaries while keeping recipes approachable. This dish reflects that balance perfectly. The butter bath not only enhances flavor but also helps maintain moisture, resulting in a perfectly cooked filet and tender lobster every time.
Ingredients
- 2 Pounds Butter
- 3 Sprigs Rosemary
- 2Tbsp Garlic, Minced
- 1 Lemon, Halved
- 4Tbsp Parsley, Chopped
- Graza Frizzle High Heat Cooking Oil
- 2 5oz. Filets
- 2 6oz. Lobster Tails
- Salt and Pepper to Taste
- 1 Bunch Asparagus
- 2 Round Polenta Cakes
Methods
- Preheat griddle to high heat. Allow 10-15 minutes or until the surface darkens and light smoke appears
- In a cast iron pot on griddle, add butter, rosemary, garlic, and half of the parsley.
- Place the lemon flat side down on the griddle to char. After 1-2 minutes or when color forms, squeeze into butter mixture.
- Next place a thin layer of Frizzle oil on the griddle and lay down the filets. Season with salt and pepper.
- Cook steaks for 3 minutes per side dipping the entire filet into the “butter bath” every couple of minutes during the cooking process.
- Once steaks have reached desired doneness, pull off griddle and set aside to rest.
- Meanwhile prepare the lobster tails by cutting down the back of the shell and pulling the meat out to lay on the top of the shell.
- Place the tails shell-side down on the griddle, season with salt and pepper. Allow the tails to cook for 2 minutes, then dip into the butter bath.
- Place the tails meat side down on the griddle for 1 minute only and dip again. Remove from griddle and set aside.
- Place asparagus and polenta cake on the griddle to cook. Spoon some of the butter over each to cook. These will only take 2 minutes each to cook.
- Slice the steak and get ready to plate.
- To plate, lay down a base of asparagus, then the polenta cake, the lobster tail to the side and lemon half on the opposite side. Then lay the sliced steak pieces across the top.
- Garnish with chopped parsley and some butter drizzle.
