Part 1 of Green Papaya Salad with Crispy Pork

Ingredients

  • 1 cup palm sugar
  • 1/2 cup sweet soy, kecap manis
  • 3 tablespoons oyster sauce
  • [AMOUNT?] Star anise
  • 200 g pork shoulder cut in 1 inch length, 3 mm thick

Directions

  1. Make a syrup by simmering the palm sugar, soy sauce, oyster sauce, salt and star anise until reduced cool.
  2. Slice pork, 5 cm by 2 cm pieces and marinade overnight in the syrup.
  3. Drain on rack until most marinade is off to avoid burning.
