Nonna’s Simple Italian Salad

Ingredients:

  • 1 tablespoon (15 ml) Italian seasoning
  • 2 tablespoons (30 ml) red wine vinegar
  • ½ cup (120 ml) olive oil
  • Salt and pepper
  • 1 head Romaine lettuce, roughly chopped
  • ½ red onion, thinly sliced
  • ½ cup (120 ml) grated Parmesan
  • 1 cup (240 ml) pepperoncini
  • ½ cup (120 ml) black olives
  • 1 pint (475 ml) cherry tomatoes, halved
  • 1 cup (240 ml) croutons

 Method:

In a jar, combine the Italian seasoning, vinegar, and olive oil. Season with salt and pepper, close the jar, and shake to combine. Reserve until needed.

In a large bowl, combine the lettuce, onion, Parmesan, pepperoncini, olives, and tomatoes. Toss to combine.

Drizzle the dressing over the salad, add the croutons, toss again, and serve immediately.
