Ingredients

  • 3 eggs
  • 100 grams flour
  • Pinch of salt
  • 25 grams butter (melted)
  • 20 grams sugar

Directions

  1. Mix eggs and flour in a bowl until smooth.
  2. Add salt, sugar and blend to dissolve.
  3. Slowly whisk in milk until thinned, and stir in melted butter.
  4. Cover and allow resting for about 1 hour before cooking.
  5. To cook lightly coat a 6” Teflon pan with oil and heat.
  6. Pour 20 milalitre of butter into pan and swirl to coat uniformly.
  7. Cook until lightly browned and then flip with a spatula and lightly brown other side
  8. These can be made ahead of time and reheated as needed.
