Crepes

Preparation time is 1 hour.
Ease of preparation is easy.
Yield 4.
Ingredients
- 3 eggs
- 100 grams flour
- Pinch of salt
- 25 grams butter (melted)
- 20 grams sugar
Directions
- Mix eggs and flour in a bowl until smooth.
- Add salt, sugar and blend to dissolve.
- Slowly whisk in milk until thinned, and stir in melted butter.
- Cover and allow resting for about 1 hour before cooking.
- To cook lightly coat a 6” Teflon pan with oil and heat.
- Pour 20 milalitre of butter into pan and swirl to coat uniformly.
- Cook until lightly browned and then flip with a spatula and lightly brown other side
- These can be made ahead of time and reheated as needed.
