Pineapple Banana Grilled Fruit Sticks With Vanilla Butter

Yield: 8 skewers
Ingredients
- 3 Bananas peeled and cut into 1 inch rounds
- 1 whole pineapple peeled and cut into 1inch squares
- 2 tablespoons melted unsalted butter (30ml)
- 8 bamboo skewers soaked in cool water for 30 minutes
Glaze:
- 1 vanilla bean scraped
- 1/3 cup brown sugar (83ml)
- 2 tablespoons unsalted butter (30ml)
Serving suggestion:
- 1 cup Vanilla yogurt (250ml)
Directions
- Preheat barbeque to medium high heat 375°F (190°C). Oil grill to prevent sticking.
- To prepare the glaze, place all (glaze) ingredients in a small saucepan. Cook over medium low heat, stirring frequently for 5-10 minutes or until slightly thickened and caramelized. Keep warm and reserve.
- Cut all the fruit into even 1inch sized pieces.
- Thread the fruit onto skewers, alternating the fruits.
- Brush fruit with melted butter.
- Set fruit skewers on a tray.
- Place fruit skewers on direct heat and cook for 2 minutes per side or until slightly caramelized and golden brown.
- In the last minute of cooking, brush the fruits with the warm glaze.
- Remove from grill and brush with the remaining glaze.
- Serve hot with store bought vanilla yogurt.
