Pineapple Banana Grilled Fruit Sticks With Vanilla Butter

Ingredients

  • 3 Bananas peeled and cut into 1 inch rounds
  • 1 whole pineapple peeled and cut into 1inch squares
  • 2 tablespoons melted unsalted butter (30ml)
  • 8 bamboo skewers soaked in cool water for 30 minutes

Glaze:

  • 1 vanilla bean scraped
  • 1/3 cup brown sugar (83ml)
  • 2 tablespoons unsalted butter (30ml)

Serving suggestion:

  • 1 cup Vanilla yogurt (250ml)

Directions

  1. Preheat barbeque to medium high heat 375°F (190°C). Oil grill to prevent sticking.
  2. To prepare the glaze, place all (glaze) ingredients in a small saucepan. Cook over medium low heat, stirring frequently for 5-10 minutes or until slightly thickened and caramelized. Keep warm and reserve.
  3. Cut all the fruit into even 1inch sized pieces.
  4. Thread the fruit onto skewers, alternating the fruits.
  5. Brush fruit with melted butter.
  6. Set fruit skewers on a tray.
  7. Place fruit skewers on direct heat and cook for 2 minutes per side or until slightly caramelized and golden brown.
  8. In the last minute of cooking, brush the fruits with the warm glaze.
  9. Remove from grill and brush with the remaining glaze.
  10. Serve hot with store bought vanilla yogurt.
