
Edamame are green soybeans still in the shell, quickly blanched in salt water and tossed in a bit of sea salt to make for an irresistible (and healthy) snack. These days you can find them in most grocers’ frozen veggie section.
Serves 2 to 4 as a snack or appetizer
Ingredients
- 4 cups (1 L) frozen edamame
- 1 teaspoon (5 mL) kosher salt
- Fleur de sel or your favourite crunchy salt, to taste
Directions
- Bring a large pot of water to a boil over high heat. Add the salt and the edamame, and cook for 1 minute, or just until the edamame is heated through.
- Drain using a colander. Shake off the excess water, and transfer to a serving plate. Sprinkle with fleur de sel (or your favourite salt) while still hot. Don’t forget to leave out a bowl for the edamame shells.
