Crispy Bean Fries + Homemade Tartar Sauce

Ingredients:
Bean Fries:
1 ½ pounds (680 g) yellow beans
1/3 cup (80 ml) flour
2 eggs
2 cups (480 ml) Panko breadcrumbs
½ cup (120 ml) grated Parmesan cheese
½ teaspoon (2.5 ml) garlic powder
1 teaspoon (5 ml) salt
½ teaspoon (2.5 ml) pepper
Vegetable oil, for frying
Homemade Tartar Sauce:
1 cup (240 ml) mayonnaise, store-bought or homemade (see recipe)
1/3 cup (80 ml) relish
1 shallot, finely chopped
1 tablespoon (15 ml) chopped capers
1 tablespoon (15 ml) chopped fresh parsley
1 tablespoon (15 ml) fresh lemon juice
1 teaspoon (5 ml) lemon zest
2 teaspoons (10 ml) Dijon mustard
½ teaspoon (2.5 ml) Worcestershire sauce
Method:
For Bean Fries:
Rinse beans and shake dry. Add flour to one bowl. Add eggs to a second bowl and whisk to mix well. To a third bowl, mix together breadcrumbs, grated Parmesan, garlic powder, salt, and pepper. Dip beans into flour. Shake off excess. Dip beans into egg. Then dip beans into Panko mixture.
Heat vegetable oil in a large deep-sided pot to 375 F (190 C).
Place breaded beans in hot oil without overcrowding. Cook for 2-3 minutes or until golden and crispy. Remove from hot oil and place on a plate lined with paper towel to drain excess liquid. Repeat with remaining beans.
For Tartar Sauce
Combine mayonnaise, relish, shallot, capers, parsley, lemon juice, lemon zest, Dijon, and Worcestershire sauce in a bowl.
Chill for 30 minutes to an hour.
