Cold Oil Fries

Yield: 4-6 servings

Ingredients:

2 pounds (900 g) Yukon Gold or russet potatoes, scrubbed clean

Vegetable oil, for frying

Flaked sea salt, for topping

Finely chopped fresh parsley, for topping

 

Method:

Slice the potatoes into ½-inch (2.5 cm) sticks. Add the sliced potatoes to a Dutch oven. Pour enough oil over top to cover the fries. Slowly bring temperature of oil to 375 F (190 C). Cook for 10-12 minutes, gently stirring occasionally.

 

Once fries are golden and crispy, remove to a paper towel-lined bowl. Sprinkle with salt and parsley.
