In the ‘Go Green’ episode of The Urban Vegetarian, host Desiree Nielsen shows us how to add more plants to our plates. For this recipe, it is a tasty chia seed pudding, topped with toasted coconut. Chia seeds are a tasty superfood packed with antioxidants and fiber.
Serves 2-3
Ingredients:
2 ½ cups (590 ml) coconut milk
½ cup (120 ml) chia seeds
½ teaspoon (2.5 ml) vanilla extract
3 tablespoons (45 ml) honey
½ teaspoon (2.5 ml) cinnamon powder
Pinch of salt
Sliced strawberries, for topping
Toasted shredded coconut, for topping
Method:
Add chia seeds to a bowl
In a second bowl, add coconut milk, vanilla, honey, cinnamon and whisk to combine.
Pour mixture into a bowl with chia seeds and whisk to incorporate.
Pour mixture into a mason jars or other containers, and leave in refrigerator a few hours to overnight.
Top with sliced strawberries and toasted shredded coconut.
