
Yield: 15 Figs
Ingredients
- 15 Black Mission figs
- 2 cups port wine (500ml)
- Fresh pepper to taste
- 7-8 sheets of thinly sliced Italian Prosciutto
Directions
- Use a sharp small knife to score the bottom of the figs making a large X shape.
- Pour the port in a large bowl and stir in the pepper to taste. Add the figs to the mixture and let marinate for 1 hour. When ready, carefully strain the figs.
- Place excess port in a saucepan set over medium low heat. Simmer sauce for 20 minutes or until slightly thickened.
- Cut Prosciutto in half lengthwise.
- Wrap the Proscuitto around the figs. If necessary, secure with a toothpick. Place figs on an oiled tray.
- Preheat barbeque to medium high heat 375F (190C).
- Rub or spray grill with oil grill to prevent sticking.
- Place the figs on the grill and cook for about 2-4 minutes or until the Proscuitto is golden brown and slightly crispy turning frequently to prevent burning.
- Remove figs from the grill. Serve figs hot and drizzle with reduced sauce.
