Ingredients:
4 cups (960ml) baby spinach
2 tablespoons (30ml) olive oil
2 tablespoons (30ml) butter
2 shallots, chopped
2 garlic cloves, chopped
Salt and pepper, to taste
Method:
Heat oil in a large frying pan.
Add shallots and garlic and fry for 2 minutes.
Add butter and heat for another minute.
Add spinach and cook for 3 minutes, stirring constantly.
Once the spinach is wilted, season with salt and pepper and remove from heat.
