Tuscan Beans

Ingredients:

600 grams (1lb 5oz.) dried cannellini beans

¼ cup (60ml) olive oil

2 cloves garlic, crushed

4 plum tomatoes, diced

Salt and pepper, to taste

2 tablespoons (30ml) fresh parsley, chopped

1 tablespoon (15ml) red pepper flakes

 

Method:

Soak beans in water in a covered container for 6-10 hours.

Remove from water, and place in a large pot with fresh water.

Boil beans until soft, about 1 hour.

In a separate sauce pan, heat oil over medium-high heat.

Add garlic and red pepper flakes, and cook for 2-3minutes.

Add tomatoes and cook for 2 minutes.

Add boiled cannellini beans, and cook for 3-4 minutes.

Mix and season with salt and pepper.

Remove from heat.

Once well mixed, add chopped parsley, and mix.

Serve immediately.
