Fried Zucchini Rounds

Ingredients

  • 1 medium zucchini
  • 3 cups vegetable oil (750ml)
  • Salt and pepper

Directions

  1. Cut the ends off the zucchini.
  2. Cut the zucchini threw the center to make 2 halves.
  3. Using an apple corer, remove the seeds.
  4. Using a mandolin slice into thin rounds.
  5. Place rounds on paper lined tray to dry out slightly.
  6. Preheat oil to 350F.
  7. Add rounds and cook until light golden brown and crisp. (They will cook quite quickly).
  8. Remove using a slotted spoon on to a paper towel lined tray.
  9. Sprinkle with salt and pepper.

Makes approximately 2 cups (500ml) of chips for Tatsuta fried chicken garnish.
