Crab Hush Puppies with Cosmopolitan Sauce

Crab Hush Puppies

Ingredients:

1 cup (240ml) cornbread mix

½ cup (120ml) water

12 ounces (340g) fresh lump crab meat

1 teaspoon (5ml) salt

1 teaspoon (5ml) pepper

Canola oil, for frying

 

Method:

In a large bowl, combine cornbread mix, water, salt, pepper and crab meat. Mix until blended completely.

Heat frying oil to 375oF (190oC).

Drop dollops of batter into the oil and fry for 3-5 minutes, or until golden brown and cooked through.

Remove from the oil and place on a paper towel to drain excess oil.

 

Cosmopolitan Sauce

Ingredients:

½ cup (120ml) cranberry chutney

Pinch of salt

Pinch of black pepper

2 tablespoons (30ml) honey

 

Method:

Blend all ingredients together in a food processor.

Spread Cosmopolitan Sauce in the bottom of a plate. Serve the Crab Hush Puppies over the sauce. Dust icing sugar and the zest of 1 lime over the Crab Hush Puppies.
