Mascarpone Whipped Cream

Ingredients

  • 1/2 cup (125 mL) mascarpone cheese
  • 1/2 vanilla bean, seeds scraped
  • 3/4 cup (185 mL) heavy cream
  • 3 tablespoons (45 mL) icing sugar

Directions

  1. In a bowl, lightly beat the mascarpone with a wooden spoon to soften. Add the scraped vanilla seeds. In a separate bowl, whip the cream with the icing sugar until soft peaks form. Gently fold the whipped cream into the mascarpone in 3 separate additions. Set aside in the refrigerator.
