
Here’s a more classic take on the Argentinian condiment. It makes a great marinade for Grilled Flank Steak.
Makes about 4 cups
Ingredients
- 2 cups (500 mL) finely chopped fresh parsley
- 1/4 cup (60 mL) finely chopped fresh oregano
- 1/2 red bell pepper, finely diced
- 1 small red onion, finely diced
- 4 cloves garlic, finely chopped
- 1/2 teaspoon (2.5 mL) red chili flakes
- 3/4 cup (185 mL) extra-virgin olive oil
- 1/4 cup (60 mL) red wine vinegar

In a bowl, place the herbs, red pepper, onion, garlic, and chili flakes. Add salt and freshly ground pepper to taste, then add the olive oil and vinegar. Taste and adjust the seasonings.
