  • 1 tablespoon salt
  • ¼ cup sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons cumin
  • 2 tablespoons chili powder (Mexican, chimayo mild, ancho or some other chili powder, not supermarket brand)
  • 1 tablespoon ground black pepper
  • 1 tablespoon cayenne
  • ¼ cup paprika
  • 1 teaspoon ground pepper
  • 1 teaspoon dried ginger
  • 1 teaspoon dried sage
  • 1 teaspoon oregano
  • 1 teaspoon allspice
  • ½ teaspoon ground cloves
  • 1 cup ball park mustard
