Warm Potato Salad with Blue Cheese, Bacon and Red Onion

Ingredients

  • 3lbs. red skinned potatoes cooked not cooled (1.36kg)
  • ½ lb of bacon cooked and drained (226g)
  • 1 cup red onion thinly sliced (250ml)
  • 8 oz. good blue cheese (226g)
  • ¼ cup fresh basil leaves roughly chopped (60ml)
  • 1 big bunch watercress stems trimmed
  • Salt and pepper to taste

Dressing:

  • 1 tablespoon cider vinegar (15ml)
  • 1 teaspoon Dijon mustard (5ml)
  • 1 tablespoon fresh lemon juice (15ml)
  • 2 teaspoon minced fresh garlic (10ml)
  • ¼ cup olive oil (60ml)
  • Pepper to taste

Directions

  1. In a small bowl or jar mix together all dressing ingredients until well combined.
  2. Cut warm potatoes, place potatoes in a large bowl and cover with dressing.
  3. Add the remaining ingredients and toss gently to combine.
