Warm Potato Salad with Blue Cheese, Bacon and Red Onion
                Serves: 6
Ingredients
- 3lbs. red skinned potatoes cooked not cooled (1.36kg)
 - ½ lb of bacon cooked and drained (226g)
 - 1 cup red onion thinly sliced (250ml)
 - 8 oz. good blue cheese (226g)
 - ¼ cup fresh basil leaves roughly chopped (60ml)
 - 1 big bunch watercress stems trimmed
 - Salt and pepper to taste
 
Dressing:
- 1 tablespoon cider vinegar (15ml)
 - 1 teaspoon Dijon mustard (5ml)
 - 1 tablespoon fresh lemon juice (15ml)
 - 2 teaspoon minced fresh garlic (10ml)
 - ¼ cup olive oil (60ml)
 - Pepper to taste
 
Directions
- In a small bowl or jar mix together all dressing ingredients until well combined.
 - Cut warm potatoes, place potatoes in a large bowl and cover with dressing.
 - Add the remaining ingredients and toss gently to combine.
