Melonball Salad

Ingredients

  • Juice of 2 limes
  • ¼ cup liquid honey (60ml)
  • ½ cup fresh mint leaves chiffonade (125ml)
  • 1 ripe honeydew melon
  • 1 large ripe cantaloupe
  • 1 small seedless watermelon or ½ of a large

Special tools:

  • Melon baller

Directions

  1. In a small bowl mix together the limejuice, honey and mint.
  2. Cut the honeydew, watermelon and cantaloupe in half.
  3. Remove and discard any seeds from the melon.
  4. Using a melon baller, make balls from the melons and place in a bowl.
  5. Drizzle melon balls with honey dressing.
  6. Serve cold.
