Grilled Cabbage with Ranch Dressing

Ingredients:

3 tablespoons (45 ml) olive oil

8 thick slices bacon, cooked crisp and crumbled, bacon fat reserved

1 large green cabbage, sliced into 8 wedges (core kept intact)

Salt and pepper

 

Ranch dressing

1 clove garlic, minced

3 tablespoons (45 ml) chopped parsley

1 tablespoon (15 ml) chopped chives

1 cup (240 ml) mayonnaise

½ cup (120 ml) buttermilk

½ teaspoon (2.5 ml) onion powder

1 teaspoon (5 ml) Worcestershire sauce

Salt and pepper

 

Chopped chives and parsley, to garnish

 

Method:

Preheat grill to medium-high heat.

 

Add olive oil to bacon fat and brush onto cabbage wedges. Sprinkle with salt and pepper. Grill for 15-20 minutes, turning occasionally until cabbage is tender and nice char marks appear.

 

For the ranch dressing, combine garlic, chopped parsley, chopped chives, mayonnaise, buttermilk, onion powder, Worcestershire sauce, salt, and pepper in a bowl and stir to combine. Adjust with more buttermilk for desired consistency. Refrigerate until plating.

 

Drizzle grilled cabbage wedges with ranch dressing. Top with crumbled bacon, chopped chives and parsley.
