Fried Basil and Cherry Tomato Salad

Yield:  4 servings.

 

Ingredients:

3 tablespoons (45ml) olive oil

½ cup (120ml) fresh basil leaves, packed

2 cups (480ml) cherry tomatoes, sliced in half

2 cloves garlic, finely chopped

Salt and pepper, to taste

 

Method:

Heat oil in frying pan over medium-high heat.

Once the oil is gently smoking, add basil leaves. This will create a loud crackling sound, wait 8-10 seconds.

Add cherry tomatoes, salt and pepper.

Cook for 1-2 minutes, stirring constantly.

Remove from heat and serve immediately.
