Fattoush Salad

Ingredients:

  • ½ head of romaine lettuce, torn or chopped
  • 3 tomatoes, sliced thin
  • ½ Lebanese cucumber, sliced thin
  • 1 onion, sliced thin
  • 4 radishes, sliced thin
  • ¼ cup (60 ml) finely chopped parsley
  • ¼ cup (60 ml) finely chopped mint
  • 2 pitas, cut into triangles and toasted
Dressing:
  • 1 tablespoon (15 ml) sumac
  • ½ cup (120 ml) lemon juice
  • 2 garlic cloves, minced
  • ½ teaspoon (2.5 ml) salt
  • ½ teaspoon (2.5 ml) pepper
  • ½ cup (120 ml) olive oil

 


 

Method:

Put lettuce, tomato, cucumber, onion, radishes, parsley and mint to bowl. Toss.

Top with cut pita.

To make the dressing, in a bowl mix together sumac, lemon juice, garlic, salt and pepper.

Add olive oil and whisk to incorporate.

Pour over top of lettuce mixture.
