Thai Cucumber Salad

Sometimes the tastiest dishes are the simplest ones. Crunchy cucumber and shallots flavoured with garlic, lime and fish sauce. This is a great starter on its own or as a side dish with fish or seafood.

Ingredients

For the dressing

  • 1 clove garlic, finely chopped
  • 1 small red bird’s eye chili, seeds removed, finely chopped
  • 1 1/2 tablespoons (22.5 mL) fresh lime juice
  • 1 tablespoon (15 mL) fish sauce
  • Pinch of granulated sugar
  • Pinch of salt

For the salad

  • 1 medium cucumber, cut diagonally into 1/4-inch (6 mm) slices
  • 3 shallots, cut into 1/4-inch (6 mm) slices

Directions

  1. For the dressing, whisk together all of the ingredients in a medium bowl until the sugar and salt are dissolved. Add the cucumbers and shallots and mix to combine.

Serves 4-6
