Arugula, Peaches, Blue Cheese and Walnut Salad

Ingredients:

4 cups fresh arugula, washed and patted dry (1 litre)

3 fresh peaches, stones removed, sliced ½ inch wedges

½ cup thin sliced red onion (125ml)

4 oz good quality blue cheese (113g)

½ cup lightly toasted walnut halves (125ml)

3 tablespoons premade balsamic dressing (45ml)

 

Method:

Place the arugula on a plate and top decoratively with ingredients.

Drizzle with dressing.
