Lupini Hummus

Ingredients

  • 1 cup lupini beans in brine, drained and rinsed
  • ¼ cup tahini
  • 3 Tbsp olive oil
  • 1 clove fresh garlic
  • 1 lemon, juice of
  • ½ tsp salt
  • Olive oil and finely chopped, fresh Italian parsley for serving

 

Method

  1. Drain the lupini well, then transfer them and the rest of the ingredients to the small bowl of a food processor. Process until completely smooth, may take a few minutes, adding a little warm water (1 tablespoon at a time) in case the consistency is too dense.
  2. Taste and see if any ingredient need be adjusted more to your liking.
  3. Spread in a serving dish, drizzle with olive oil and sprinkle with finely chopped parsley. Enjoy with some warm crusty bread, tarallli, crackers and veggies.
