Ingredients
- 1 cup lupini beans in brine, drained and rinsed
- ¼ cup tahini
- 3 Tbsp olive oil
- 1 clove fresh garlic
- 1 lemon, juice of
- ½ tsp salt
- Olive oil and finely chopped, fresh Italian parsley for serving
Method
- Drain the lupini well, then transfer them and the rest of the ingredients to the small bowl of a food processor. Process until completely smooth, may take a few minutes, adding a little warm water (1 tablespoon at a time) in case the consistency is too dense.
- Taste and see if any ingredient need be adjusted more to your liking.
- Spread in a serving dish, drizzle with olive oil and sprinkle with finely chopped parsley. Enjoy with some warm crusty bread, tarallli, crackers and veggies.
