  • 3 pounds boneless pork butt, cut into 2-inch cubes

  • 2 tablespoons minced jalapeno chile (seeded for less heat)

  • 3 cups frozen corn kernels, thawed, plus 1 cup if you like more texture
  • 1 cup buttermilk
  • 1 egg
  • ¼ cup unsalted butter, melted, plus more for cooking

  • ¾ cup cornmeal
  • ¼ cup granulated sugar

  • 1 teaspoon kosher salt

Method

Make the Pork
