Ultimate Falafel Scotch Eggs Recipe

Falafel Scotch Eggs Recipe

This falafel Scotch eggs recipe wraps soft-boiled eggs in a vibrant chickpea, herb, cumin, garlic, and lemon falafel mixture before frying them until golden and crisp. Featured on Bring on the Karbs! with Josh and Erica Karbelnik, this recipe is served over smooth hummus with a drizzle of luxurious truffle tahini and fresh watercress for a bold, brunch-worthy dish.

Improvised in the playful spirit of Bring on the Karbs!, this recipe transforms classic Scotch eggs into a Middle Eastern-inspired comfort dish with a bright, herbaceous twist. The result is crispy, creamy, savoury, and deeply satisfying.

The Inspiration

Scotch eggs are traditionally made by wrapping boiled eggs in sausage meat, coating them, and frying them until crisp. They are hearty, portable, and beloved as pub food, picnic food, or a satisfying snack. This falafel Scotch eggs recipe reimagines that classic format by replacing the sausage layer with a fresh, herb-packed falafel mixture made from soaked chickpeas, garlic, onion, cilantro, parsley, mint, cumin, lemon, chickpea flour, and baking powder.

The dish fits perfectly into the world of Bring on the Karbs! because it celebrates chickpeas in multiple forms. Soaked chickpeas become the falafel coating, canned chickpeas become the hummus, and chickpea flour helps bind the falafel mixture. It is a carb-forward, texture-driven recipe that feels abundant, creative, and full of personality. Josh and Erica Karbelnik’s improvisational cooking style shines through in the unexpected combination of Scotch eggs, falafel, hummus, truffle, and fresh watercress.

Ingredients

For the Falafel Mix
  • 426 grams soaked chickpeas
  • 3 cloves garlic
  • 1/2 white onion
  • 1 cup cilantro
  • 1 cup parsley
  • 1 cup fresh mint
  • 1 tsp cumin
  • 1 lemon
  • 1 tsp salt
  • 2 tbs chickpea flour
  • 1/2 tsp baking powder
  • Oil for frying
For the Eggs
  • 6 medium eggs
  • 1 tablespoon white vinegar
  • Boiling water
  • Ice for an ice bath
For the Truffle Tahini
  • 1/2 cup tahini paste
  • Ice water as needed (about 1 cup)
  • 1 tbsp black truffle paste
  • 1 tsp kosher salt
  • 2 tablespoons lemon juice
For the Hummus
  • 1 (15 oz) can chickpeas rinsed and drained
  • 1/2 tsp baking soda
  • 1/4 cup lemon juice
  • 1 large clove garlic
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1 tablespoon extra-virgin olive oil
For Garnish
  • Watercress

Method

For the Eggs
  • Place a pot of water on the stove over high heat and add white vinegar. Once the water is boiling add in your eggs and cook for 6 minutes. Immediately place eggs into an ice bath to stop cooking.
  • Peel eggs and set aside.
  • Place a pot of oil on the stove and heat to 350F.
  • Make your falafel mix: in a food processor add all ingredients and blend, making sure not to form a smooth paste. There should still be some texture.
  • Wrap your falafel mix around each individual egg until fully covered (Do this carefully to not break the eggs). Wrap eggs using plastic wrap to fully seal, then remove to fry.
  • Deep fry your scotch eggs for about 2 minutes until the falafel mix is golden brown.
Make the Hummus
  • Add all ingredients to food processor, blend until smooth.
Make the Tahini
  • Add ingredients to a bowl.
  • Whisk gradually, adding more cold water if needed.
  • The mixture will start off looking split until whisked enough and enough cold water has been added.
  • Serve Scotch eggs on bed of hummus drizzled with truffle tahini.
  • Garnish with fresh watercress.

Serving Suggestions

This falafel Scotch eggs recipe is ideal for brunch, lunch, mezze-style entertaining, or a creative vegetarian-friendly main course for anyone who loves bold chickpea-based dishes. Serve the Scotch eggs whole for a dramatic presentation, or slice them in half to reveal the egg centre and create a beautiful plate with golden falafel, creamy hummus, and glossy truffle tahini.

For drinks, consider mint tea, sparkling water with lemon, a crisp lager, a dry white wine, or a light citrus spritz to balance the fried coating and earthy truffle flavour. When serving guests, arrange the hummus across a large platter, nestle the Scotch eggs on top, drizzle the truffle tahini generously, and scatter watercress over everything for a fresh, abundant presentation.

Final Thoughts
