Yield: 1 whole crispy skin
Ingredients:
- 1 fresh salmon skin, scraped clean
- Salt
Method:
Preheat oven to 350 F (175 C).
Line a baking sheet with parchment paper, then lay out the salmon skin very flat.
Season lightly with salt.
Lay a second piece of parchment paper over the skin, then cover with a second tray to keep the skin flat while baking.
Bake for 20 minutes, until the skin is dry and crisp.
Enjoy immediately as a snack or as a garnish for Salmon A La Nage (see recipe).
