Ingredients:
- 10 slices bacon
 - 4 ounces (113 g) brown sugar
 - ½ teaspoon (2.5 ml) cayenne pepper
 - ⅛ teaspoon (0.75 ml) salt
 
Method:
- Preheat oven to 400 F (205 C)
 - Line a baking sheet with parchment paper and place a wire rack on top.
 - Lay the bacon out on the rack so it is in a single layer and no slices are touching. Transfer to the oven and cook until the bacon is almost as cooked as you’d like it to be, between 10-20 minutes.
 - Remove from the oven and allow to cool slightly.
 - In a bowl, combine the sugar, cayenne, and salt. Mix well.
 - Coat the bacon with the mixture, patting it down gently.
 - Using a torch, melt the sugar mixture until it has caramelized and coated the bacon, 3-4 minutes, constantly moving the torch.
 - Allow to cool to room temperature and use to garnish a big-ass Caesar.
