Spinach Salad With Bacon, Cashews And Apples

Ingredients
- 5 cups spinach leaves (1.2 litres)
- 1 cup crumbled freshly cooked bacon or 12 pieces whole Pancetta bacon crisped up (250ml)
- ½ cup toasted cashews coarsely chopped (125ml)
- 2 sweet crisp apples (like gala or granny smith) sliced into matchsticks, skin on
- ½ cup red onion sliced thin (125ml)
- 1 cup bean sprouts washed and dried (250ml)
Vinaigrette:
- 1 shallot minced fine
- 2 tablespoons red wine vinegar (30ml)
- 1-tablespoon fresh lemon juice (15ml)
- 2 teaspoons Dijon mustard (10ml)
- 1/3-cup olive oil (83ml)
- Salt and pepper to taste
Directions
- Place all fresh salad ingredients into a bowl and toss.
- To prepare the vinaigrette, place all ingredients in a small mason jar and shake until well combined.
- Pour dressing over mixture and toss again to evenly coat.
