Spinach Salad With Bacon, Cashews And Apples

Ingredients

  • 5 cups spinach leaves (1.2 litres)
  • 1 cup crumbled freshly cooked bacon or 12 pieces whole Pancetta bacon crisped up (250ml)
  • ½ cup toasted cashews coarsely chopped (125ml)
  • 2 sweet crisp apples (like gala or granny smith) sliced into matchsticks, skin on
  • ½ cup red onion sliced thin (125ml)
  • 1 cup bean sprouts washed and dried (250ml)

Vinaigrette:

  • 1 shallot minced fine
  • 2 tablespoons red wine vinegar (30ml)
  • 1-tablespoon fresh lemon juice (15ml)
  • 2 teaspoons Dijon mustard (10ml)
  • 1/3-cup olive oil (83ml)
  • Salt and pepper to taste

Directions

  1. Place all fresh salad ingredients into a bowl and toss.
  2. To prepare the vinaigrette, place all ingredients in a small mason jar and shake until well combined.
  3. Pour dressing over mixture and toss again to evenly coat.
