Smoked Salmon Omelette

A classy start to any day, or an inviting brunch dish, this smoked salmon omelette is sure to please! A classic omelette with flakey smoked salmon, creamy goat cheese and onion-y little chives will give you the fuel you need to tackle any day!


 

Ingredients:

  • 6 large eggs, divided
  • 2 tablespoon (30 ml) unsalted butter, divided
  • 3 tablespoons (45 ml) goat cheese
  • Salt and pepper
  • Smoked salmon, to garnish
  • Chives, to garnish

 


 

Method:

Crack three eggs into a medium bowl.

Whisk eggs until whites and yolks are combined.

Melt 1 tablespoon (15 ml) butter in a non-stick pan over low heat.

Swirl the butter around the pan and up the sides to coat the pan.

Add eggs to the pan and cook over low heat.

Move the center of the eggs in the pan with a rubber spatula.

Cook until the sides of the omelette are set, and the center is still slightly runny.

Crumble half of the goat cheese evenly over the omelette.

Fold omelette on one side into the center.

Fold the opposite side to the center.

Flip onto plate, with the seam on the bottom.

Repeat for the second omelette with the remaining ingredients.

Garnish with slices of smoked salmon, salt, black pepper, and chives.
