Scallops with Sesame Orange Gremolata

Sesame Orange Gremolata

Ingredients:

½ cup (120ml) finely chopped fresh cilantro

½ cup (120ml) finely chopped fresh parsley

2 cloves garlic, finely grated

¼ cup (60ml) toasted sesame seeds

Zest of 2 large oranges

 

Method:

Combine all ingredients in a small mixing bowl and mix well.

Reserve for plating.

 

Sesame Scallops

Ingredients:

8 large sea scallops (size U10)

Salt and pepper

½ cup (120ml) toasted white sesame seeds

3 tablespoons (45ml) olive oil

2 tablespoons (30ml) butter

Sesame orange gremolata (see recipe)

 

Method:

Pat scallops dry and season with salt and pepper.

Roll sides of scallops in sesame seeds until properly coated.

Heat oil in a large skillet over medium-high heat.

Place scallops flat side down in hot oil.

Cook for 3-4 minutes, or until golden brown.

Flip scallops, and add butter to pan.

Baste scallops with butter and cook for another 3-4 minutes.

Once scallops are seared on both sides and slightly firm, remove from pan.

Serve scallops warm, and top with sesame orange gremolata.
