Yield: 4-6 servings.
Brined Turkey Breast
Ingredients:
1 fresh turkey breast (2-3lbs or 0.9-1.4 kg)
4 cups (1L) water
2 bay leaves
1 tablespoon (15ml) black peppercorns
2 cinnamon sticks
½ cup (120ml) soy sauce
¼ cup (60ml) fish sauce
½ cup (120ml) sugar
Method:
Place all ingredients in a stock pot and bring to a boil over high-heat.
Simmer for 10 minutes, and remove from heat.
Place in refrigerator for 1 hour to cool completely.
Place turkey in cold brine and let sit for 8-12 hours, refrigerated
Remove turkey from brine and reserve for Stuffed Turkey Breast.
Stuffed Turkey Breast
Ingredients:
1 Brined Turkey Breast
6 slices of Prosciutto
¼ cup (60ml) olive oil
3 links of chorizo sausage, casings removed
½ cup (120ml) shallots, diced
½ cup (120ml) celery, finely chopped
1 cup (240ml) shiitake mushrooms, chopped
2 cloves of garlic, chopped
2 tablespoons (30ml) fresh lemongrass, chopped
Salt and pepper, to taste
2 tablespoons (30ml) parsley, chopped
½ cup (120ml) water chestnuts, chopped
1 cup (240ml) panko bread crumbs
Method:
Pre-heat oven to 350oF (180oC).
If using fresh chorizo, simply remove casing from sausage to begin recipe.
If using cooked or smoked chorizo, chop sausage and grind gently in a food processor to begin recipe.
In a large skillet, heat half of the oil over medium-high heat.
Add ground chorizo, celery, shallots, lemongrass shitake mushrooms and garlic.
Cook for 5-6 minutes, stirring occasionally.
Once meat is slightly browned and vegetables are soft, remove from heat.
Place stuffing in a mixing bowl, and add panko, water chestnuts, parsley and salt and pepper.
Butterfly the turkey using a sharp knife.
Place turkey between two sheets of plastic wrap and tenderize using a meat mallet.
Once flattened, remove from plastic wrap and lay on a clean workstation.
Place stuffing in center of turkey breast, from left to right.
Roll Turkey breast over the stuffing.
Place stuffed turkey breast over laid out slices of Prosciutto.
Wrap into a tight cylinder using plastic wrap. Once roll, removed plastic wrap and rewrap in aluminum foil.
Place in oven, and cook for 60-75 minutes.
Once firm and cooked through, remove from oven.
Remove foil and plastic wrap.
Heat remaining olive oil in a grill pan, or cast iron pan.
Place prosciutto wrapped turkey breast in hot oil, and cook on all sides for 2-3 minutes, or until prosciutto is crispy.
Remove from heat, slice and serve hot.
