If you are looking for a delicious, fast and elegant dinner party main – this is it. Drizzle a tender rack of lamb with lavender honey, encrust it in ground almonds and roast to perfection – it will impress even your biggest foodie friends.
Ingredients:
- 2 racks (6 bones each) Frenched lamb
- Salt and pepper
- 1 tablespoon (15ml) olive oil
- ½ cup (125ml) lavender honey
- ¾ cup (187ml) toasted crushed whole almonds
Method:
Preheat oven to 375F (190°C).
Line a baking tray with aluminum foil.
Season lamb with salt and pepper
Add one tablespoon (15ml) of olive oil to a large skillet (large enough to hold 2 racks) placed over medium high heat.
Place the lamb racks into the hot skillet and sear until deep golden brown and caramelized, turning when necessary. Remove from pan.
Place honey on a plate. Place nuts on a separate plate.
Dip seared lamb into honey and coat all over. Then dip into the crushed almond mixture. Cover completely with almonds. Place on foil lined tray. Repeat with remaining rack of lamb.
Cover the bones with foil to prevent burning.
Place in oven and roast for 15 minutes for medium rare.
Remove from the oven and tent with foil. Allow the meat to rest for 10 minutes.
Slice between the bones either single bone or double pending on preference.
Divide on to 4 plates.
