Ingredients

  • 2 lbs. lamb loin trimmed of fat cut into 1 inch squares (907g)
  • 1 cup store bought or homemade Tzatziki sauce (250ml)
  • Olive oil for brushing
  • Tin foil
  • Salt and pepper
  • 6 pitas or 15 mini pitas
  • 10 bamboo skewers soaked in cool water for 30 minutes.

Marinade:

  • ¼ cup fresh lemon juice (60ml)
  • 3 tablespoons olive oil (45ml)
  • 1½ tablespoons fresh oregano (22.5ml)
  • 1 tablespoon fresh chopped garlic (15ml)
  • ¼ cup grated Spanish onion (60ml)
  • Pepper
