Ingredients:
For the steak:
- 1 1/2 pounds (680 g) flank steak
For the marinade:
- 1/2 cup (120 ml) oil
- 1 hot pepper, minced
- 1 small onion, thinly sliced
- ¼ cup (60 ml) parsley, chopped
- ¼ cup (60 ml) oregano, finely chopped
- 1/2 teaspoon (2.5 ml) crushed chili flakes
- 1 teaspoon (5 ml) salt
- 1 lime, juice
Method:
For the marinade:
In a bowl whisk together oil, hot pepper, onion, parsley, oregano, chili flakes, salt, lime juice.
In a zip-top bag, combine marinade and steak.
Seal and chill overnight.
For the steak:
Preheat a grill to high heat.
Grill steak for six minutes on each side turning every three minutes to create a cross hatch pattern.
Remove from grill and let rest for 5-10 minutes.
Thinly slice steak across the grain and serve.
