Ingredients
- 6 pitas cut in half
Dressing:
- 1½ tablespoons fresh lemon juice (22.5ml)
- 2 teaspoons fresh oregano minced (10ml)
- Splash of red wine vinegar
- ¼ cup olive oil (60ml)
- Salt and pepper
Salad:
- 3 ripe tomatoes cut in wedges or multi coloured baby tomatoes cut in half
- ½ cucumber cut into ¼ inch slices
- ½ cup black katamala olives pitted (125ml)
- 1 cup mixed bell peppers chopped (yellow and red) (250ml)
- ½ red onion thinly sliced
- ½ cup fresh basil leaves roughly chopped (125ml)
- ½ cup feta cheese (125ml)
Directions
- In a jar, shake salad dressing ingredients until evenly combined.
- Place all vegetables in a bowl and toss with dressing.
- Crumble feta cheese onto salad.
- Stuff salad into pita pockets and serve immediately.
