Greek Salad In A Pita

Ingredients

  • 6 pitas cut in half

Dressing:

  • 1½ tablespoons fresh lemon juice (22.5ml)
  • 2 teaspoons fresh oregano minced (10ml)
  • Splash of red wine vinegar
  • ¼ cup olive oil (60ml)
  • Salt and pepper

Salad:

  • 3 ripe tomatoes cut in wedges or multi coloured baby tomatoes cut in half
  • ½ cucumber cut into ¼ inch slices
  • ½ cup black katamala olives pitted (125ml)
  • 1 cup mixed bell peppers chopped (yellow and red) (250ml)
  • ½ red onion thinly sliced
  • ½ cup fresh basil leaves roughly chopped (125ml)
  • ½ cup feta cheese (125ml)

Directions

  1. In a jar, shake salad dressing ingredients until evenly combined.
  2. Place all vegetables in a bowl and toss with dressing.
  3. Crumble feta cheese onto salad. 
  4. Stuff salad into pita pockets and serve immediately.
