Fried Catfish with Smoked Jalapeno Relish

Fried Catfish

Ingredients:

4 catfish fillets (5 ounces each or 150 grams each)

1 cup (240ml) butter milk

½ cup (120ml) fine cornmeal

1/3 cup (80ml) all-purpose flour

1 tablespoon (15ml) Old Bay Seasoning

1 teaspoon (5ml) cayenne pepper

Canola oil, for frying.

 

Method:

Soak catfish in buttermilk for 1-2 hours.

Mix cornmeal, flour and spices together in a shallow dish.

Heat oil to 350oF (180oC).

Remove the fish from the buttermilk, dredge in flour mixture and place in frying oil.

Cook for 4-5 minutes, or until golden brown.

Remove fish from oil, and place on a paper towel to drain excess liquid.

 

Smoked Jalapeno Relish

Ingredients:

1 white onion, diced

2 jalapenos, seeded and diced

3 cloves garlic, minced

2 red bell peppers, seeded and diced

5 drops Liquid Smoke

Juice of 1 lemon

1 tablespoon (15ml) sugar

2 tablespoons (30ml) canola oil

Salt, to taste

 

Method:

Heat oil in frying pan over medium heat.

Add onion, jalapenos, garlic and peppers and cook for 6-8 minutes.

Add sugar, lemon juice, Liquid Smoke and salt.

Cook for another 2-4 minutes, until nearly all liquids have evaporated.

Remove from the pan and cool.

Serve alongside the fried catfish.
