Florentine Steak

Ingredients:

2 well-aged steaks, cut 1-1 ½ inch thick (1 pound each or 450 grams each)

Olive oil, for drizzling

Salt and pepper to taste

1 lemon, cut in half

1 sprig of rosemary

 

Method:

Heat grill over high heat.

Drizzle steaks with olive oil, and rub with the rosemary to infuse the taste.

Season both sides with salt and pepper.

Place steaks directly on grill, and cook for 3-4 minutes.

Flip, and cook for another 2-3 minutes.

Rotate steaks 90 degrees and cook for another 2-3 minutes.

Meanwhile, cut lemon in half and place on grill flesh side down.

Once the steaks are slightly charred and have nice grill marks on one side, flip.

Cook for another 4-5 minutes.

Remove steaks and lemons from grill and flip on to a plate.

Let the steaks rest covered with tin foil for 10 minutes.

Slice the steaks and drizzle with olive oil.

Serve immediately with grilled lemon halves.
