Makes: 2 large sandwiches

Ingredients

  • 4 slices sour dough bread thick bread cut 1- inch thick
  • ½ cup (125ml) crunchy peanut butter
  • 6 slices thick sliced candied bacon
  • 2 bananas sliced little over ¼ inch (.25cm) thick
  • 1 egg
  • 1 cup (250ml) milk or half and half cream
  • Salt
  • 1 tablespoon (15ml) butter

Directions

  1. Spread the peanut butter on both sides of the 4 slices of bread.
  2. Add sliced banana to fit snuggly. Then top with bacon.
  3. Top the bread with the remaining bread.
  4. Press firmly down.
  5. Make egg batter by whisking egg with milk or half and half if using and a pinch of salt.
  6. Dip sandwich in egg mixture. Flip and soak bread thoroughly.
  7. Using two hands squeeze gently to remove excess batter.
  8. Place a non-stick pan over medium low heat.
  9. Add butter to melt.
  10. Place sandwiches on pan and cook for 4 minutes or until golden brown and crispy.
  11. Flip and repeat.
