This recipe is from the Bacon & Bananas episode of A is for Apple with Robert Jewell.
Makes: 2 large sandwiches
Ingredients
- 4 slices sour dough bread thick bread cut 1- inch thick
- ½ cup (125ml) crunchy peanut butter
- 6 slices thick sliced candied bacon
- 2 bananas sliced little over ¼ inch (.25cm) thick
- 1 egg
- 1 cup (250ml) milk or half and half cream
- Salt
- 1 tablespoon (15ml) butter
Directions
- Spread the peanut butter on both sides of the 4 slices of bread.
- Add sliced banana to fit snuggly. Then top with bacon.
- Top the bread with the remaining bread.
- Press firmly down.
- Make egg batter by whisking egg with milk or half and half if using and a pinch of salt.
- Dip sandwich in egg mixture. Flip and soak bread thoroughly.
- Using two hands squeeze gently to remove excess batter.
- Place a non-stick pan over medium low heat.
- Add butter to melt.
- Place sandwiches on pan and cook for 4 minutes or until golden brown and crispy.
- Flip and repeat.
