Country Pate

Ingredients:

  • 1 tablespoon (15 ml) butter
  • 1 onion, sliced
  • 2 tablespoons (30 ml) white wine
  • 2.2 lbs (1 kg) ground pork
  • 10 slices bacon, chopped into ½-inch pieces
  • 1 tablespoon (15 ml) fish sauce
  • 2 teaspoons (10 ml) salt
  • ½ teaspoon (3 ml) pepper

 


 

Method:

Preheat oven to 320 F (160 C).

Heat butter in skillet over medium-high heat. Add sliced onion and cook for 4-5 minutes.

Deglaze with white wine, and continue cooking for 1 minute. Remove from heat.

Add ground pork and chopped bacon to a mixing bowl.

Add sautéed onions, fish sauce, salt and pepper, and mix until well combined.

Add the mixture to a food processor, and blend for 1-2 minutes, or until slightly smooth.

Transfer mixture to a greased 4-inch x 8-inch glass dish.

Using fingertips, pat mixture down until it is evenly spread and tightly packed.

Cover dish with aluminum foil, and place in a deep baking dish.

Add water to the baking dish until it reaches halfway up the glass dish.

Place baking dish in oven and cook for 90 minutes.

Remove baking dish from oven, and remove glass dish from water.

Let cool and chill for 1 hour.

Once chilled, remove pate from glass dish and slice into thin slices.
