Brussels Sprout and Havarti Grilled Cheese

Ingredients:
Olive oil, for frying
2 shallots, finely sliced
½ cup (120 ml) thinly sliced Brussels sprouts (sharp knife or shaved on a mandoline)
Salt and pepper
4 slices hearty sourdough bread
Avocado oil, for frying
4 slices Havarti cheese
2-3 teaspoons (10-15 ml) whole grain mustard
Method:
Drizzle olive oil in a skillet and heat. Add shallots and sauté 1-2 minutes until starting to brown.
Add Brussels sprouts to skillet and cook 3-4 minutes, until sprouts are tender and a bit brown.
Season with salt and pepper. Reserve.
Press one side of each of the pieces of bread into avocado oil.
Top the dry side of two slices with the Brussels sprouts mixture.
Drizzle with whole grain mustard.
Top with Havarti cheese, then add the remaining bread slices, oiled side out.
Grill in a skillet, turning, until both sides are brown and cheese has melted, about 4-5 minutes.
