Brisket is known for its rich marbling and bold beefy flavor, but it requires patience and low, steady heat to achieve perfect tenderness. This recipe uses a sweet and savory dry rub made with brown sugar, herbs, and warming spices. After hours of gentle roasting, the brisket is finished under the broiler for a slightly charred crust and served with a reduced balsamic pan sauce that adds tangy depth.
Whether served for a Sunday family dinner, holiday gathering, or special occasion, this brisket recipe delivers restaurant-quality results right from your oven.
The Inspiration
Brisket has long been celebrated in cuisines around the world, from Southern barbecue traditions to European braised dishes. Its appeal lies in its ability to absorb bold seasoning while becoming incredibly tender when cooked low and slow.
In this version from A Is For Apple 2, Theresa Visintin combines classic roasting techniques with a sweet-spiced crust and balsamic glaze. The brown sugar caramelizes beautifully, while chili powder, mustard, thyme, and oregano provide warmth and aromatic complexity.
The finishing glaze, made from the brisket’s own cooking juices enhanced with balsamic vinegar and beef broth, creates a concentrated sauce that perfectly balances sweet, savory, and tangy flavors.

- 1 4 lb. (1.8kg) beef brisket, trimmed
- 2 teaspoons (10ml) onion powder

Serving Suggestions
This oven-baked brisket pairs beautifully with creamy mashed potatoes, roasted root vegetables, or buttery green beans. The rich balsamic glaze complements earthy sides such as garlic-roasted carrots or sautéed mushrooms. For a lighter contrast, serve with a crisp arugula salad dressed in lemon vinaigrette. The brisket also works wonderfully in sandwiches the next day, layered on crusty bread with extra glaze and pickled onions. A full-bodied red wine like Cabernet Sauvignon or Syrah enhances the bold, savory flavors of the beef.
