Traditional beef stroganoff is known for its rich sour cream sauce. In this version, buttermilk replaces heavy cream, adding tanginess while keeping the sauce smooth and balanced. Combined with earthy mushrooms, aromatic nutmeg, and fresh parsley, the result is a refined yet hearty dish served over silky pappardelle pasta.
Perfect for cozy evenings or an elevated weeknight dinner, this stroganoff is satisfying without feeling overly heavy.
The Inspiration
Beef stroganoff has roots in 19th-century Russian cuisine and has evolved into a comfort food classic around the world. Its defining characteristics include tender beef, mushrooms, and a creamy sauce served over noodles.
In this adaptation from A Is For Apple 2, Theresa Visintin introduces buttermilk for brightness and balance. The slight acidity enhances the richness of the beef while preventing the dish from becoming too dense.
Slow simmering allows the beef stock to reduce and concentrate, building depth of flavor. The addition of Worcestershire sauce contributes savory umami notes, while nutmeg subtly enhances warmth and complexity.
