Ingredients:
1 tablespoon (15 ml) sugar
1 teaspoon (5 ml) salt
2 ½ cups (591 ml) of lukewarm water
2 cups (480 ml) pre-cooked white corn flour
3 tablespoons (45 ml) corn oil
Method:
Preheat oven to 375 F (190 C).
In a mixing bowl, whisk together sugar, salt, and water.
Whisk until sugar and salt dissolve completely.
Add corn flour a bit at a time, mixing well between additions.
Once all flour has been added, knead the dough until firm and smooth.
Let dough rest at room temperature for 10 minutes.
Divide dough into five portions and press each portion into 4-inch rounds about 1-inch thick.
Heat corn oil in a cast iron pan over medium heat.
Place flattened dough balls into the skillet and cook for 3-4 minutes, or until golden brown on the bottom.
Flip and continue cooking for 3-4 minutes, until brown on the second side.
Remove arepas from pan and place on a baking tray.
Bake arepas for 40-45 minutes, or until they sound hollow when tapped.
