Thai Mojito

The cocktail you know and love but with sweet lychees and ginger.

Ingredients

  • 1/2 cup (125 mL) fresh mint leaves
  • 1-inch (2.5 cm) piece fresh ginger, peeled
  • Juice of 1 lime
  • 1/4 cup (60 mL) canned lychees in syrup
  • 2 fluid ounces (1/4 cup/60 mL) light rum
  • 1/2 cup (125 mL) soda water
  • Fresh sprigs of mint, for garnish

Directions

  1. Muddle the fresh mint in the bottom of 2 serving glasses using a muddler or the end of a wooden spoon.
  2. Very finely grate the ginger. To a martini shaker, add 2 teaspoons (10 mL) ginger along with the lime juice and a splash of the lychee syrup. Add the rum and soda water. Add a bunch of ice and shake to combine.
  3. Add ice to the serving glasses, and pour the contents of the martini shaker over the ice. Garnish with lychees and sprigs of mint.
