The cocktail you know and love but with sweet lychees and ginger.
Ingredients
- 1/2 cup (125 mL) fresh mint leaves
- 1-inch (2.5 cm) piece fresh ginger, peeled
- Juice of 1 lime
- 1/4 cup (60 mL) canned lychees in syrup
- 2 fluid ounces (1/4 cup/60 mL) light rum
- 1/2 cup (125 mL) soda water
- Fresh sprigs of mint, for garnish
Directions
- Muddle the fresh mint in the bottom of 2 serving glasses using a muddler or the end of a wooden spoon.
- Very finely grate the ginger. To a martini shaker, add 2 teaspoons (10 mL) ginger along with the lime juice and a splash of the lychee syrup. Add the rum and soda water. Add a bunch of ice and shake to combine.
- Add ice to the serving glasses, and pour the contents of the martini shaker over the ice. Garnish with lychees and sprigs of mint.
